Sous vide (soo-veed) cooking was invented in the 1970’s by Chef Georges Pralus.  The sous vide cooking technique is all about heating your water to a certain temperature and maintaining a precise temperature to cook your foods perfectly.

The immersion circulator cooker is an electric device that is used to circulate and heat water to a specific temperature and to maintain that temperature to cook foods to a particular doneness.

You can easily cook anything  from meats, seafood and poultry to potatoes, veggies, eggs, custards and even infused oils and drinks, in 6 simple steps.

Step 1:  Fill your desired pot or bowl with water (depending on which immersion cooker you choose, they will tell you how much water is needed)

Step 2:  Add your immersion circulator to the water (the immersion circulators have clips attached to them, most are adjustable for different size pots)

Step 3:  Take whatever you are cooking, season it to your liking, (remember to go lighter on your seasonings because since they are put into bags with the air removed, the seasoning is stronger than if you where cooking it in your traditional styles)

Step 4:  Put your food into either a ziplock bag, (being sure to remove as much air as possible), a sous vide bag or a foodsaver style bag being sure that you have removed as much as as possible

Step 5:  Clip your bag(s), being sure that they aren’t on top of each other, onto the pot or bowl with any style clip, (clothespins work very well).  Make sure that your food is fully submerged into the water so that it gets cooked

Step 6:  Turn your sous vide immersion circulator on and set it to the proper setting that is specified with the immersion circulator that you choose, walk away and let it cook

With the sous vide cooking methods, you typically have to cook your foods in separate bags so that your foods are cooked thoroughly.  You can cook multiple things at one time but you just need them in separate bags.

Veggies typically cook for a shorter amount of time so you could put your meats in first and add your veggies later and just cook them according to the sous vide immersion circulator instructions.
